【中文摘要】 以雞腿菇為材料,菌落總數為研究對象,采用中心組合設計響應面分析法研究了超高壓處理對雞腿菇菌落總數數量級的影響。建立了以溫度、壓力和保壓時間為參數的超高壓影響雞腿菇菌落總數死亡數量級的二次多項式數學模型,理論分析了模型的預測能力較強,驗證試驗相關性分析證實了模型的準確性和可靠性。最優影響參數組合為:溫度25.0℃、壓力268.1 MPa、保壓時間14.3min。
【英文摘要】 Effects of ultra high pressure processing on total colonies of Coprinus comatus were studied by central composite design with response surface methodology in this paper.The second order quadratic equation associating temperature,pressure and pressure holding time with sterilization magnitude of total colonies was established,the good prediction ability of the model was confirmed with theoretical analysis,and the accuracy and reliability of the model were verified by correlation analysis of the validation data.The optimum process parameters for the sterilization were obtained as: temperature 25.0℃,pressure 268.1 MPa,and pressure holding time 14.3min.
